I am going on 3 visits now.
  Being a bartender I like to sit at the bar.  The first time I came in I had to wait on a loud spanish speaking lady talking to guy at the bar blocking the only 2 seats available.  I had to stand and wait for her to finish her entire conversation before I could sit down.  Then she was so loud and obnoxious I had to later move down 2 more seats.  I later figured out that this is the owner.

From my bartender's POV.
Generally the bar looks clean and well stocked.  I do notice fresh cut fruit for the drinks as well.  I tried the $2.99 Margarita--total crap. I know its $2.99 but nasty!  Tasted like pure sour mix and I had to run to the car and get a zantac before I shoot out my freaking gall bladder.  The high end margartitas are better, allthough I thought they were weak.  A good margarita should be shaken well and have some froth on the top.  SHAKE A SOUR DRINK!  They must have gone to one of those crappy bartender schools.  The bartenders suck in my opinion and were not very attentive.  They are all about the chics and the keeping the owner happy that always parks herself at the end of the bar.

Now for the good part! 
I do love the food.  Plenty of choice dishes of authentic Americanized Mexican cuisine.  I say americanized becuse authentic is pretty shitty.  They eat dam pig intestins in a flour tortia for gods sake.  We dont need to eat that here in America. 
Back to the food.
I have tried 4 different dishes.  Great presentation on the plate.  Expo does a great job at making sure the plate has no runover on the plate edges.  Even thought the restaurant was full I received my food at a fair amount of time. The beef is cooked nice and tender without being rare.  The vegetables were cooked perfectly as well.  Not too soft with just the right amount of crunch and plenty of flavor.  I suspect that everything is cut and prepared fresh to order.  The rice and bean portions are just what I like to see-small.  Most all Mex places load you up with garbage sitting on top of a pile of rice and beans that looks the same coming out as it did going in.  The main dish is a good portion of food as well. The first time I bit into the enchilada--wonderful!  I said, "Now this is what a fucking enchilada is suppose to taste like!" I also liked the fact that there was no fat or sinuew on any of the meat I had eaten.  

 One last thing...They hae a Mariachi band that walks around and plays.  Now, they are very good, but DAMN I felt like Ben Stiller in that movie where the mariachi follows him all over the resort.  My god I had a trumpet right in my face.....laddaa daddda ddda bup bah bah bah baba addaaaa!  Just a little too much for me.

Overall I like this place and will defininitly eat there again and again.  The prices all run around 10 bucks for a main dish.  They have priced the menu well.  My next mission is to try a fish based dish!  See you soon Agave Azul!
